My friend Dana bakes the same sourdough loaf twice a week, and for two years she could not figure out why one batch would rise into an airy dome and the next would come out squat and gummy. Same recipe, same oven, same flour bag. The problem was her measuring cups. A cup of flour scooped straight from the bin can weigh anywhere from 120 to 155 grams depending on how packed it is, and that swing is enough to wreck a loaf. She bought a kitchen scale, started weighing her flour to the gram, and her bread stopped being a gamble. That is the moment most people go looking for a scale, but bread is only the start. The same little slab on your counter portions out 40-gram cookie balls, doses your morning coffee to a 1:16 ratio, splits a casserole into even meal-prep containers, and tells you whether that package is going to cost you a fortune at the post office. A scale that handles all of that well is not the same as the cheapest one on the shelf, so here is what actually matters when you pick one.

Resolution: when 1 gram is fine and when you need 0.1

Resolution is the smallest change the scale can register, and it is the first spec that separates a baking scale from a general kitchen scale. For flour, sugar, water, and most everyday cooking, 1-gram resolution is plenty. You are never going to notice the difference between 248 and 249 grams of milk in a batter. But the second you get into coffee, espresso, yeast, salt, or anything where a few grams changes the outcome, 1-gram steps feel clumsy. Weigh 3 grams of instant yeast on a 1-gram scale and you are guessing between 2 and 4, which is a real difference in how fast your dough proofs. This is why serious coffee people insist on 0.1-gram resolution: an 18-gram espresso dose and a 17.6-gram dose pull differently. My honest take is that most home cooks want two things covered. Either buy one 1-gram scale for cooking and a small 0.1-gram scale for coffee and spices, or buy a single scale that switches modes. The dual-resolution units that do fine steps up to 500 grams and then 1-gram steps beyond that are the sweet spot if you only want one gadget on the counter.

Capacity: don’t buy one that maxes out mid-recipe

Max capacity is the spec people underestimate until the scale flashes an error at the worst possible moment. A lot of budget scales top out at 3 kilograms, which sounds like a lot until you set a heavy stand-mixer bowl on the platform and start adding a double batch of dough. The bowl alone can eat a kilogram before you have measured a single ingredient. I would not go below 5 kilograms, and if you cook big or you plan to weigh packages, an 11-pound model gives you real breathing room. That said, there is a trade-off worth knowing: higher-capacity scales sometimes sacrifice fine resolution, because a strain gauge built to read 11 pounds accurately is not the same one that reads tenths of a gram. So think about your heaviest realistic task. If you portion whole turkeys or weigh shipping boxes, prioritize capacity. If you mostly measure espresso and spices, a lower-capacity, high-resolution scale serves you better. Trying to get both extremes out of one cheap unit usually means it does neither well.

Tare and unit switching, the two buttons you’ll actually use

Tare is the button that resets the display to zero with a container already on the platform, and it is the feature that makes a scale worth owning. Put your mixing bowl down, hit tare, add flour, hit tare again, add water, hit tare again, add starter. You build the entire recipe in one bowl and never dirty a second dish. A good tare button responds instantly and holds steady; a bad one lags or drifts, so you tare, the number creeps back to 2 grams, and you stop trusting it. Test this in the store if you can, or return it fast if the zero wanders. Unit switching matters almost as much. You want grams and ounces at minimum, ideally pounds and ounces together for shipping, and milliliters for liquids. The milliliter mode assumes water density, so it is roughly right for water and milk and wrong for honey or oil. I keep mine in grams for everything and only flip to pounds-and-ounces when a box is headed to the post office.

Platform, bowl, and the shape of the thing

The physical design decides how the scale fits your life, and the big fork in the road is flat platform versus attached bowl. A flat stainless platform is the more flexible choice by far. You set any bowl, plate, or box you want on it, and when you are done you wipe it flat and it disappears into a drawer. The downside is that a wide bowl can hide the display, which brings us to a design detail worth checking: does the readout sit on a lip that extends past the platform, or does it sit flush where a big pot will cover it? A scale with the display on a forward tab or an angled front is far less annoying in daily use. Attached-bowl scales, the kind with a plastic mixing bowl that clips on top, look tidy and are nice for weighing loose things like rice, but the bowl caps your capacity, it is one more bulky item to store, and you are stuck with that bowl’s size. Unless you have a specific reason, the flat platform wins. Also glance at the footprint. A scale barely bigger than a coaster will tip if you set a wide plate on it off-center.

The display and the auto-off that will drive you up a wall

A backlit display sounds like a luxury until you are weighing dark coffee beans in a dim kitchen at 6 a.m. and cannot read the number. Backlighting genuinely helps, and a display angled toward you helps more than raw brightness. But the single most infuriating trait a scale can have is aggressive auto-off. Cheap scales power down after 30 seconds of no weight change to save battery. That means if you tare your bowl, walk to the pantry for the next ingredient, and take a minute, you come back to a dead screen and a lost tare. You have to start over. Look for a scale with a longer timeout, ideally two or three minutes, or one where auto-off can be disabled. Some coffee scales stay on until you turn them off, which is exactly right for anyone who works slowly. I have thrown a scale in the donate box purely over this. Read the reviews for the phrase “turns off too fast” and believe them, because no other spec matters if the thing keeps quitting on you mid-recipe.

Power, waterproofing, and living with it long-term

Most kitchen scales run on two AAA or a couple of coin cells, and honestly, batteries are fine for a device that sips power. A decent set lasts months. USB-rechargeable scales are becoming common and they are convenient if you hate buying batteries, but a rechargeable coffee scale that dies mid-brew and needs cabling is its own headache, so I lean toward replaceable batteries for reliability and keep a spare pair in the drawer. The other long-term issue is spills. Flour dust and water get everywhere near a scale, and liquid seeping under the buttons kills cheap units. A sealed or splash-resistant surface, sometimes marketed as waterproof, is worth paying for if you weigh wet dough or rinse the platform. At minimum, want a flat surface with no seams around the buttons where gunk collects. Wipe it, do not submerge it unless the maker explicitly says you can. Get these basics right and a good scale is a ten-year tool that quietly makes everything you cook more consistent.

Do I really need 0.1-gram resolution or is 1 gram enough?

For general cooking and baking, 1-gram resolution is genuinely enough, and buying finer than that adds cost you may never use. The exceptions are coffee, espresso, yeast, salt, and spice blends, where a difference of two or three grams changes the result you get in the cup or the rise you get in the dough. If those are part of your routine, either get a dedicated small 0.1-gram scale to sit next to your grinder or choose a dual-mode unit that reads tenths up to about 500 grams and switches to whole grams above that. That combination covers a precise espresso dose and a five-kilo bowl of bread flour without compromise.

Why does my scale keep turning off while I’m still using it?

That is auto-off, a battery-saving feature that shuts the scale down after a short stretch with no weight change, and on cheap models it can trigger in as little as 30 seconds. The fix is to buy for it up front: pick a scale with a timeout of two to three minutes or, better, one that lets you disable auto-off entirely. Coffee-focused scales usually stay awake until you switch them off, which is ideal if you work at a relaxed pace. Until you replace it, a workaround is to keep a light touch or a small weight moving on the platform, but that is a band-aid, not a solution.

Can one scale handle both cooking and weighing packages for shipping?

Yes, if you choose the capacity and units with shipping in mind. Get a flat-platform model rated to at least 5 kilograms, or 11 pounds if you ship often, and confirm it offers a pounds-and-ounces mode alongside grams so you can read a package weight the way carriers list it. The one caution is that the display should sit on a lip or tab that a wide box will not cover, because a shipping box is exactly the kind of item that blocks a flush readout. A single well-chosen flat scale portions cookie dough, doses coffee, and weighs your outgoing parcels without any trouble.
