You followed the recipe exactly. Two cups of flour, a cup of brown sugar, the whole thing. And the cookies came out flat and greasy, or the cake sank in the middle, or the bread was a dense brick you could prop a door open with. Here is the uncomfortable truth: you probably didn’t measure two cups of flour at all. You measured somewhere between 240 and 340 grams of it, and the recipe writer had one specific number in mind. That gap is where good baking goes to die.
A “Cup” of Flour Is a Lie
Weigh out what you think is one cup of flour ten different times and you will get ten different weights. A cup can hold anywhere from about 120 grams to 170 grams, and the difference is entirely about how the flour got into the cup. Dip the measuring cup straight into the bag and pack it down and you compress the flour, cramming in an extra 30 to 50 grams. Spoon it in loosely and level it off with a knife and you get far less. Neither is wrong, exactly, but they are not the same amount, and your recipe cannot tell which one you did.
That range sounds small until you scale it. A recipe calling for three cups of flour might land at 360 grams if you spoon-and-level, or over 500 grams if you scoop and pack. That is nearly forty percent more flour going into the same amount of liquid, butter, and eggs. Forty percent. No wonder the muffins are dry. You didn’t make the recipe; you made a different, worse recipe that happened to share a name.
Why Volume Betrays You Everywhere Else Too
Flour is the worst offender, but it has company. Brown sugar is measured “packed,” which is a polite way of admitting the entire system is broken. How hard do you pack it? Firmly, says the recipe. Firmly according to whom? A gently pressed cup and a knuckle-crushed cup can differ by 40 grams, and brown sugar carries moisture, so you are also throwing off the hydration of the whole batch.
Cocoa powder clumps and traps air, so it settles unpredictably. Powdered sugar does the same. Sticky ingredients like honey, molasses, and peanut butter cling to the sides of the cup, so you either leave a spoonful behind or fight to scrape it all out, and either way the amount is a guess. Chopped nuts and shredded coconut depend entirely on how coarsely you cut them. Even granulated sugar, which is fairly consistent, still means dirtying an extra cup and losing a little to the sides every single time.
The root cause under all of this is simple: volume measures the space something takes up, but baking is chemistry, and chemistry cares about mass. A recipe is really a set of ratios between weights. When you measure by cups, you are estimating mass through a proxy that changes with humidity, packing, grind, and how caffeinated you were that morning. A scale skips the proxy and measures the thing that actually matters.
The Case for the Scale, Made Plainly
Once you weigh, your results stop being random. The same recipe gives you the same cake on a rainy Tuesday and a dry Saturday, in your kitchen and your sister’s. That repeatability is the whole point. When a bake fails, you can actually diagnose it, because you know the input was correct and the problem lies in the oven temperature or the mixing or the recipe itself, not in a mystery cup of flour.
There is a quieter benefit too: less cleanup and less waste. Instead of a drawer of dry measuring cups, a wet cup, and a set of spoons, you put your mixing bowl on the scale and add ingredients straight into it. One bowl. You can scale a recipe up or down with plain arithmetic instead of trying to visualize two-thirds of three-quarters of a cup. And you get faster, not slower, once the initial awkwardness wears off, because you are not leveling and packing and rinsing between every addition.
How to Actually Weigh: The Tare Button Is Your Friend
Here is the whole workflow. Put your empty mixing bowl on the scale. Press tare, which resets the reading to zero so the bowl’s weight disappears from the count. Add flour until the display reads the number you want. Press tare again. Add the sugar to its target. Tare again. Add the cocoa. You are building the entire dry mix in one bowl, zeroing out between each ingredient, never dirtying a second vessel. This is the feature that makes weighing feel effortless, and it is the reason people who switch rarely go back.
Set the scale to grams and leave it there. Grams beat ounces for baking because they are smaller units, so you get finer resolution: a good scale reads to a single gram, whereas ounces force you into clumsy fractions or decimals. Two grams of salt is meaningful and easy to hit; a sixteenth of an ounce is a headache. Nearly every serious baking recipe published today lists gram weights, and if yours doesn’t, that tells you something about the recipe.
Buy a scale that reads to 1 gram and handles at least 5 kilograms, and ideally one that also shows tenths of a gram for tiny amounts like yeast and salt. That is the only equipment decision that matters here. The technique is the star; the tool just needs to be accurate and have a responsive tare button.
Common Weights Worth Memorizing
You don’t need to memorize much, but a few anchors help you sanity-check any recipe. All-purpose flour is 120 grams per cup when spooned and leveled, which is the standard most reputable recipes assume. Granulated sugar is about 200 grams per cup. Packed brown sugar is roughly 213 grams. Butter is 227 grams per cup, or 113 grams per stick. Cocoa powder is around 85 grams per cup. Water and milk are close enough to 240 grams per cup that you can treat them that way.
If a recipe says “1 cup flour (120g)” you know the writer spoon-and-levels. If it says “1 cup flour (140g)” they scoop. Either is fine as long as you follow their gram number, and now you can, exactly. When a recipe gives only cups with no weights, use 120 grams for flour as your default and adjust from there if the dough feels off.
Baker’s Percentages and When Volume Is Fine
Once you weigh everything, a door opens: baker’s percentages. Bakers express every ingredient as a percentage of the total flour weight, which is always set at 100 percent. A lean bread dough might be 100 percent flour, 65 percent water, 2 percent salt, 1 percent yeast. This lets you scale to any batch size and compare recipes at a glance, because you can instantly see one dough is wetter or saltier than another. It only works because the numbers are weights. You cannot build a percentage system on cups, and this is how professionals think about formulas.
All that said, I am not a zealot. Volume is perfectly fine for liquids you are pouring by feel, for a splash of vanilla, for a teaspoon of baking soda where the amount is tiny and the tolerance is forgiving. Measuring spoons are quicker than the scale for anything under a few grams unless you own a scale that reads tenths. Cooking, as opposed to baking, rarely needs weights at all; a stew doesn’t care whether your onion is 180 grams or 210. Save the scale for the bakes where precision decides success, which is most of them, and don’t feel guilty scooping a spoon of salt into a pot of soup.
Do I really need to weigh liquids, or can I use a measuring cup?
You can absolutely use a cup for water and milk, since a milliliter of water weighs almost exactly one gram and liquid measuring cups are reasonably accurate for pourable ingredients. That said, weighing liquids straight into your bowl on the tared scale is often easier than squinting at a measuring line at eye level, and it keeps everything in one place. For thick or sticky liquids like honey, molasses, and oil, weighing is genuinely better because none of it clings to a second cup and gets left behind.
My recipe only lists cups. How do I convert it?
Use standard conversions as your starting point: 120 grams per cup of all-purpose flour, 200 grams per cup of granulated sugar, 213 grams for packed brown sugar, 113 grams per stick of butter. Write those grams next to the cup amounts and bake it once. If the result is perfect, you now have a weighed recipe forever. If it is a touch dry or wet, nudge the flour by 10 or 15 grams next time. After one or two bakes you will have a version that is genuinely yours and endlessly repeatable, which is more than the original cup measurements ever offered.
Is a cheap kitchen scale accurate enough for baking?
For most home baking, yes. An inexpensive scale that reads to a single gram will serve you well for flour, sugar, butter, and liquids, where a gram or two of drift changes nothing. The one place cheap scales struggle is very small amounts like yeast and salt, where 2 grams versus 3 grams matters and a whole-gram readout rounds too coarsely. If you bake a lot of bread, spend a little more for a scale that shows tenths of a gram, or simply measure those tiny quantities with spoons. Check any new scale against a known weight, like a wrapped stick of butter that should read 113 grams, so you trust the numbers.
